Heartburn-Friendly Recipe

INGREDIENTS

  • 1½  Pounds Boneless, Skinless Chicken Breast Cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp Oregano
  • 1 tsp Basil
  • ½  tsp Rosemary
  • ½  tsp Parsley
  • 1 Non-stick Vegetable Cooking Spray
  • 4 Cups Zucchini Cut into 1-inch pieces
  • 3 Cups Small whole Button Mushrooms Stems removed
  • 8 (10 inch) Wooden Skewers Soaked in water for 20 minutes
  • 1 Cup Long-grain Brown Rice 

Prep Time: 20 minutes Cook Time: 10 minutes Serves: 4 people

DIRECTIONS

1.In a medium-sized bowl, combine 1 tablespoon olive oil, 1 teaspoon oregano, 1 teaspoon basil, ½ teaspoon rosemary, ½ teaspoon parsley and mix.
2.Cut chicken into large pieces and add to the bowl, coating all sides of the chicken. Let chicken sit and marinate for 15 minutes.
3.While the chicken is marinating, wash and cut the veggies.
4.Spray a broiler pan with nonstick vegetable spray
5.Add and stir 4 cups of zucchini pieces and 3 cups mushrooms into the bowl until thoroughly coated.
6.Thread chicken, mushrooms, and zucchini pieces onto the skewers, alternating the pieces.
7.Place kabobs on broiler pan, broiling each side for 5 minutes.

Optional: Serve over brown rice.
