Heartburn Friendly Recipe: Broiled Chicken Kabobs
INGREDIENTS

Cook Time: 10 minutes
Serves: 4 people
- 1½ Pounds Boneless, Skinless Chicken Breast Cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp Oregano
- 1 tsp Basil
- ½ tsp Rosemary
- ½ tsp Parsley
- 1 Non-stick Vegetable Cooking Spray
- 4 Cups Zucchini Cut into 1-inch pieces
- 3 Cups Small whole Button Mushrooms Stems removed
- 8 (10 inch) Wooden Skewers Soaked in water for 20 minutes
- 1 Cup Long-grain Brown Rice
DIRECTIONS
Optional: Serve over brown rice.
- In a medium-sized bowl, combine 1 tablespoon olive oil, 1 teaspoon oregano, 1 teaspoon basil, ½ teaspoon rosemary, ½ teaspoon parsley and mix.
- Cut chicken into large pieces and add to the bowl, coating all sides of the chicken. Let chicken sit and marinate for 15 minutes.
- While the chicken is marinating, wash and cut the veggies.
- Spray a broiler pan with nonstick vegetable spray
- Add and stir 4 cups of zucchini pieces and 3 cups mushrooms into the bowl until thoroughly coated.
- Thread chicken, mushrooms, and zucchini pieces onto the skewers, alternating the pieces.
- Place kabobs on broiler pan, broiling each side for 5 minutes.
